Zema Estate Sparkling Merlot was made from fruit which was harvested at its optimum maturity. After maturing in French oak for 18 months, a specific selection of barrels were chosen to make this wine. The base wine was secondary fermented using the Charmat method to achieve its fine bead and mousse. A small addition of Vintage port contributes to the roundness of the palette and accentuates the finish. A fragrant nose of black cherries and plums is echoed by an exciting arrangement of ripe black fruits. Velvety soft with a fine mousse and silky tannins, our Sparkling Merlot is drinking refreshingly well now and will develop further with cellaring.
